INGREDIENTS YOU’LL NEED

OATS: This is the main ingredient for the recipe. You can use rolled oats, steel-cut oats, old-fashioned oats, or can even use oat flour. You can also make your own oat flour and use it in the recipe. Though steel cuts oats don’t go so well in the recipe, they don’t blend in the baked oatmeal recipe well. EGGS: You can make this recipe with eggs. For a vegan or an eggless version of baked oats, you can use a flax egg along with vegan milk.BANANA: Adding banana provides a nice flavor and texture to the baked oats. Also, it provides sweetness to the recipe. Or you can also add ¼ to ½ cup of milk to the recipe.SWEETENER: You can also add honey or maple syrup for a little sweetness in the recipe. Toss all the ingredients, including oats, flax eggs, bananas, maple syrup, vanilla extract, baking powder, and vegan milk, in a blender. Blend until smooth, and it has a batter-type consistency. Let the batter sit for 5-10 minutes. That will result in soft & fluffy oat cake. Add flavoring as per your taste like blueberries, mixed fruits, nuts, chocolate chips, etc. Grease the pans and transfer the batter to a baking dish or in ramekins. You can top it with some mixed berries, chocolate, and nuts.

How to Make in the oven

Preheat the oven at 350 for 15-20 minutes. Bake it for 20-25 minutes or until the toothpick inserted comes out clean.

How to Make in an Instant Pot

Add the mixture to the cake pan/ bundt pan or ramekins/ silicone molds. Add water to the Instant Pot and press Saute. Insert trivet in the Instant Pot. When water is hot, transfer the cake pans or ramekin to the Instant Pot. Close lid and pressure cook with the vent in the sealing position— For Cake Pan, pressure cook for 25 minutes, and in Ramekins for 15 minutes. Garnish baked oatmeal cups with some berries and nuts. When the timer beeps, turn the vent to the venting position and do a quick release.

Baked oatmeal tastes best when you make it fresh. But sometimes I like to make them ahead of time just to save some time in the morning. You can cover them with foil or plastic wrap. And store them in the refrigerator for up to 3-5 days. You can also freeze the baked oatmeal once cooked. Cut oats cake into the square of rectangle pieces. Wrap it in plastic wrap and store it in freezer-safe bags. Reheat the baked oatmeal as needed.

SOME SUBSTITUTIONS

You can use rolled oats, old-fashioned oats, quick oats in the recipe. Don’t use steel-cut oats as they don’t blend so nicely in the recipe.You can use maple syrup, honey, brown sugar, sweetener, or regular sugar for sweetness.For eggless baked oats, just replace eggs with flax eggs. Add 1 tablespoon of flax meal to 3 tablespoon of water and let it sit for 5 minutes. Then add that to the recipe.
