It’s a healthy, make-ahead breakfast that will have you full all morning long. We made coconut curry for dinner last night, and we had a partially used can of coconut milk. Wasting coconut milk is the worst, so we decided to make a batch of overnight oats. I remembered absolutely loving a coconut latte at Starbucks, so decided to add in a little bit of cold brew concentrate as well. It was one of the best breakfasts I ever had. It was sweet, had great flavor, and I got a little bit of a caffeine kick, too! These creamy overnight oats may be meal prep, but it’s SUPER easy. Just dump all your ingredients in an airtight container, give it a good stir, then cover and let it sit overnight. The next day, all you have to do is add your toppings and DEVOUR.
What’s in Coconut Latte Overnight Oats?
Rolled oats: Also known as old-fashioned oats, this type of oats are best for overnight oats as they have a chewier texture. Lite coconut milk: We used light coconut milk for a lighter and healthier version that still tastes nice and creamy. Brewed coffee: Coffee gives this oat recipe a lovely coffee flavor and an extra energy boost. Maple syrup: For some natural sweetness, we used maple syrup. You can also use honey. Ground cinnamon: This spice adds a little warmth and depth of flavor to the oats.
