There are many ways you can whip up eggs in the morning, but over-easy eggs are one of our favorites! They have an irresistible oozy yolk perfect for enhancing many different meals (+ not just breakfast!). If you’ve never made an over-easy egg, don’t fret. We tested this recipe with a variety of different fats and pans to make sure you have over easy success every time. The winners? –> butter and a nonstick pan.

What You Need for Over Easy Eggs

Large eggs: any size will do, but be mindful that smaller eggs will cook faster than large ones! Unsalted butter: we prefer unsalted butter since we’re serving these over easy eggs with salt. If you’re using salted butter, be mindful that you may not need to add salt when serving. Nonstick pan: we’re giving a full rundown of the pans we tested below, but a nonstick was the ultimate winner because the eggs don’t stick. Nonstick spatula: we found that a nonstick spatula such as a rubber spatula was easier to use than a wooden or tin one.

Feel free to sprinkle on your favorite seasonings as well! Our favorite way to season eggs is with salt, pepper, paprika, and garlic powder.

Best Pans for Over Easy Eggs

While the non-stick pan gave us the best results, you can use a variety of different pans to cook your egg over easy. If you plan to use a cast iron or stainless steel, here are some tips: For instance, if you use avocado oil or olive oil, you will be left with a bubbly egg white with those burned, crispy edges that some people adore in a fried egg. Non-stick: a non-stick pan is your best bet for frying an egg. We love that it makes an easy recipe even easier. Cast iron: a cast iron skillet will work because it gets hot fast and retains heat. However, be sure you have enough butter and check the edges of your egg frequently to make sure they aren’t sticking to the pan. Stainless steel: if you only have a stainless steel pan you can still use it. Just be very diligent when frying the eggs because stainless steel can heat inconsistently and have some very hot spots.

Top Tips for the Perfect Eggs

Use fresh eggs: The fresher the eggs, the better. Be sure to check the date on your eggs before frying them. Add more butter: Add more butter if you notice that your eggs are beginning to stick to the pan. Then lift the edges of the egg white to be sure the white unsticks. Be patient: It is easy to want to rush the process of frying your over-easy egg, but the more patient you are, the better your egg will turn out! Don’t forget to season: Always sprinkle some salt and pepper on your over-easy eggs. It elevates all the flavors in your dish.

Storage

These over-easy eggs are best enjoyed immediately, but should you have leftovers, you can store them in the fridge in an airtight container for 3 days. They are great as leftovers for making an egg salad! Fried Eggs — Every Way!
