Marinated Chops = Tender/Juicy

Dinner is served with this delicious baked bone in pork chops recipe. I’m usually a pork + rub kind of girl, but for some reason, I’ve been craving marinated pork. I love how juicy and tender marinated pork chops get and this recipe is no exception. The marinade we use is Asian-inspired, but don’t worry, it only calls for 4 total ingredients. So, head to your favorite butcher and find a delicious pair of bone-in chops and let’s get cooking!

Bone-in Chops

When it comes to pork chops, I much prefer bone in pork chops compared to boneless. I like that they are normally thicker and they seem to have much more flavor. This flavor comes from the additional fat that is typically on bone in pork chops that boneless chops don’t have.

Lemongrass Ginger Pork Chop Marinade

A great way to add flavor to pork chops is by making an easy homemade pork chop marinade! This Asian-inspired marinade is made with a few simple ingredients. Here’s what you need:

Soy sauce (or tamari for gluten-free)Ginger (freshly grated)HoneyLemongrass (freshly grated)

We love keeping fresh grated ginger and lemongrass on hand at all times. You can find these pre-packaged in a tube in the refrigerated section of some specialty grocery stores.

How long should I marinate my pork chops?

For best results, pork chops should be marinaded for at least 30 minutes, but if you can let them sit for 2 hours that is ideal. Once your bone in pork chops have marinated for 30 minutes to 2 hours, it’s time to sear and bake your pork chops.

How to Sear Pork Chops

Heat olive oil in an oven-safe cast iron skillet over medium/high heat and sear pork chops for around 1.5 minutes on each side. The purpose of searing your pork chops is to get that yummy, crunchy outside we all know in love. Note: make sure that, if you aren’t using a cast iron skillet, that you use another pan that is oven-safe. You’ll be baking these straight in the pan and you don’t want anything to melt!

How Long do you Bake Pork Chops?

Place cast iron skillet directly in the oven and bake at 375ºF for 10-15 minutes depending on how thick your pork chops are. Why Cast Iron? We suggest using a cast-iron skillet because these types of pans get super hot super fast. This is why, if you are using any other kind of pan, your bake time may differ.

Ideal Pork Chop Temp

The ideal pork chop temperature for consumption is an internal temp of 145ºF to 160ºF, 145ºF being medium-rare and 160ºF being well-done.

Let Rest

Once your chops have reached your desired temperature, remove the entire cast iron skillet from the oven. Let them rest on your stove top for at least 10 minutes before slicing and serving.
